Chicken Tikka Pizza



I know, i'm posting after 5 days, i was going through a cooking block or something. I had recipes in my head, i wanted to make stuff but just couldnt get myself to do it (i know, i dont understand it either)
Anyways, we decided to have pizza for Sehri last night :D
I will just tell you the amount of ingredients that i used, you can adjust accordingly.
This recipe makes 2 large thin crust pizzas or 2 regular deep pan pizzas

Ingredients :
(For the Dough)
Flour : 28 tbsp
Milk : 6 tbsp
Oil : 3 tbsp
Salt : 1/4 tsp
Yeast : 4 tsp
Sugar : 4 tsp

(For the Sauce)
Tomatoes : 2-3 large
Onion : 1 diced
Garlic : 3-4 cloves
Tomato ketchup : 3-4 tbsp
Salt : to taste
Red chili flakes : 1 tbsp
Oregano : 1 tsp
Thyme : 1 tsp
Sugar : 1 tbsp
(For the Topping)
Chicken : 1 breast fillet cubed
Yogurt : 3 tbsp
Shan tikka masala : 1 tbsp
Salt : to adjust
Red chili powder : 1 tsp to kick up the heat !

Capsicum : 1 large or 2 medium
Onion : 1 large
Cheddar Cheese : to your own preference
Mozzarella Cheese : to your own preference

Method :
(For the Dough)
Mix yeast and sugar with 4-5 tbsp of lukewarm water. Place it in a hot water bath (boil water, turn off the heat and place this glass in the water) Leave to 2-3 minutes to froth.

 Mix everything with the flour, knead with warm water to make a soft dough.

Leave to rise for 1-1.5 hour

(For the Sauce)

Blend tomatoes with a small amount of water. Keep aside.
Heat a little oil in a pan, Add onion. Cook till transparent.

Add crushed garlic. Cook till fragrant.

Add pureed tomatoes,

...tomato ketchup, salt, red chili flakes, sugar, oregano..

..Thyme. And a little water. 

Cook on low flame till thick. Leave to cool.

(For the Topping)

Slice onions and capsicum. Keep aside.

Marinate chicken with yogurt, Shan tikka masala, red chili powder, salt.

Stir fry in 2-3 tbsp of oil.

Meanwhile heat a piece of coal.

When the chicken is done place the coal in the middle on a piece of bread or onion skin. Pour 2 drops of oil on the coal and cover.

(To Assemble)

Flatten the dough on a greased pizza pan. Spread the sauce.

Mozzarella...

..chicken, capsicum, onions and cheddar cheese. Sprinkle with oregano.

Bake in a preheated oven at 180 for 20-25 minutes.

Pull Apart Chicken Bread



My sister wanted chicken bread for Iftar today and we had some leftover boiled chicken, so i thought why not !
but i had to do something easier than the braid i made before (that is really difficult to maneuver).
I used the same recipe as i've used before, You can get the recipe here

I used 3/4 amount of the recipe.

As for what i did, here goes

Take a small amount of dough 

Flatten it

Place a small amount of filling in the centre

Pinch in the sides to make a small parcel.
Continue making til all the dough is used.

Place them side by side on a greased pan. I used 11 inch cake pan with de-attachable bottom.

Brush with egg.

Bake in a preheated oven at 180 for 25 to 30 minutes

Khattay Aloo



i love everything to do with potatoes, so today i made khatay aloo, a must try if you like chat patta something in Iftar. Its super easy, super quick and super delicious!

Ingredients:
Potatoes : 6-7 medium 
Kalonji : 1/2 tsp
Zeera : 1/2 tsp
Red Chili Flakes : to taste ( i used 1 1/2 tsp)
Salt : to taste
Curry leaves : 2-3 sticks
Tamarind (imlee) paste : to taste ( i used 1/2 cup)

Method :

 Boil and peel potatoes.

Cut in medium sized wedges.

 Heat 3-4 tbsp of oil in a wok. Add kalonji and zeera. Cook for 1 minute.

 Add curry leaves,

(this is where I get my curry leaves )
We've had this tree for as long as i can remember :)

...red chili flakes, salt...

...and potatoes. Mix.

Add tamarind paste.

Mix and cook for a minute more.

Dish out and serve!!

Angry Birds Cupcakes



Today i made cupcakes for a very dear person. He's an iPhone fanatic (well, so am i :P), so i decided to make him cupcakes with angry birds toppers.

I made the topper 1 day ahead, so they could get dry.
