Chocolate Chunk/Chip Cookies




I was having Chocolate chip cookie cravings ever since i woke up today, so i go to my kitchen but I see that i've run out of butter, milk chocolate chips and brown sugar (which, by the way i found with some extensive pantry searching).

I compensated for the chocolate chips by some chocolate bar (diary milk) that i had at home.

As for the butter, I just thought of using vegetable oil ! :D

If you are a gooey cookie lover, like yours truly, than these cookies are for u !!

I didnt even take a proper picture. !:D sorry !!

Ingredients :
Flour : 1 1/2 cupsBaking soda : 1/2 tsp
Salt : 1/4 tsp
Sugar : 1/4 cup
Brown Sugar : 1/2 cup 
Vegetable oil : 1/2 cup 
Egg : 1 large
Vanilla essence : 1 tsp
Chocolate chips : 2/3 cup (I used 1/3 cup of milk chocolate chunks and 1/3 cup of white chocolate chips)


Method:

Sift together flour, salt and baking soda. Keep aside.

Whisk oil and both sugars...

Add egg and vanilla essence. Whisk until incorporated.

Add the flour. whisk. it fill form a sticky dough.

Add the chocolate chunks or chips (i ran out of chocolate chips :D )

...white chocolate chips.

Fold.

Line the baking sheet with parchment paper. Drop a tablespoon of batter 2 inch apart.

Bake in a preheated oven at 180 C for 13-15 minutes.

And get ready for gooey deliciousness !!

Cookies N Cream Cupcakes



It's my sister's birthday today !
Happy Birthday Hira !
She asked me to make cupcakes for her, demanding that i do something with Oreo and iPhone (i know, she's crazy) , So i made Oreo cupcakes and made iPhone icons with fondant.

This recipe yields 12-14 cupcakes.

Ingredients:

Butter : 1/2 cup (113 gm)
Sugar : 1 cup
Egg Whites : 2
Milk : 1/2 cup
Flour : 1 cup + 2 tbsp
Baking Powder : 1 tsp
Salt : a pinch
Vanilla essence : 1 tsp
Oreo Cookies : 12 cookies

Method :
Separate cookies, being careful to keep the cream on 1 side.

Insert liners into cupcake pan. Place the cookie with filling on it, filling side up, in the bottom of each paper liner. Keep aside.


Cut the remaining Oreo into chunks. Toss them in 1 1/2 tbsp of flour (so that they wont sink to the bottom of the cupcake). Keep aside.

Sift together flour, baking powder and salt. Keep aside.

Beat butter and Sugar till light and fluffy.

Add vanilla essence...

...milk and flour. Beat.

Than add egg whites. Beat till smooth. do not over mix !

Add the cookie chunks.

Fold lightly.


Fill the liners 3/4th of the way.


Bake in a preheated oven at 180 C for 17-20 minutes.

Frost with your favorite frosting. I used Ganache with Oreo cookie crumbs mixed in.

Mehndi Inspired Chocolate Cookies


Eid Mubarak everyone !!
I had 2 egg whites left over from the mocha mousse that i made and knowing me you should know that i dont waste anything :D. So i decided to make royal icing and i had to do something with cookies.
As i am not a big fan of sugar cookies, i decided to try chocolate ones.
and let me tell you, decorating cookies is a lot difficult than it looks, i know that now. But hira did help me in decorating, mehndi patterns were her idea ! :)

for the Chocolate cookies you'll need :
Butter : 1/2 cup
Sugar : 3/4 cup
Egg : 1
Vanilla essence : 1 tsp
Cocoa powder : 1/4 cup
Strong Coffee : 1 tsp coffee in 2 tbsp hot water
Baking powder : 1/2 tsp
Flour : 1 1/2 cup
Salt : a pinch

Method :

Sift together flour, Cocoa powder, salt and baking powder. Keep aside.

Beat butter and sugar till light and fluffy.

Add Coffee and flour mixture 1/2 cup at a time till a gooey dough forms.

Divide the batter in 2-3 parts, wrap in plastic and put it in the freezer for 1 hour to chill.


Roll out on a lightly floured surface 1/4 of an inch thick. Cut out desired shapes.
Place them on a tray and chill for another 5-7 minutes. This will ensure that they hold their shape while baking.


Bake in a preheated oven at 180 for 10 minutes. They will appear soft but will harden as they cool.



Cool Completely before decorating.

The ones that look good are made by my sister. I made the pathetic looking ones :D (as i dont know how to apply mehndi :D)
