Baked Capsicum Stuffed With Mince Fried Rice



My father bought some gorgeous looking capsicums today, that is when i thought of making Stuffed capsicums. This is actually a desi version of Greek dish, as my father spent a lot of time in Greece so he knows alot about Greek cuisine. He's the one who taught me how to make these delicious capsicums !

So here goes.

Ingredients:
Chicken/Beef Mince : 1/2 kg
Onion : 1 large sliced
Tomatoes : 2 diced
Green Chilies : 6-7 chopped
Salt : to taste
Red chilli powder : 1 tbsp 
Haldi : 1/4 tsp
Dhaniya powder : 1/2 tsp

Carrots : 3 
Capsicum : 8-10 (large and with a proper base)
Rice : 1/2 kg
Black pepper : 1/2 tsp

Method :

Clean and soak rice in water for 30 minutes. Than boil and keep aside.

Dice carrots. Keep aside.


Cut off the top of capsicums and take out the seeds with a spoon or a knife.


Cook mince in a little oil with onion, tomatoes, green chili, salt, red chilli powder, haldi and dhaniya powder.

Cook covered on medium flame. When done, "bhono-fy" till the oil is release and it looks like this. 

Add carrots, black pepper...

...and rice in the cooked Mince. Mix.

Stuff the rice in the capsicums.

Cover with the lid. Secure the lid with tooth picks :D



 And bake in a preheated oven at 180 for 30 minutes.


 ENJOY!!

Tip : You can add your own twist on it by stuffing the peppers with Chinese stir fried rice :D and anything else u like !!

Dahi Barey



Hey all.
So, yesterday's experiment payed off today !
i made dahi barey "again" and this time they were absolutely delicious !!!
i had these dahi barey at a friend's house, her mother made them to absolute perfection, so i asked my friend for the recipe. Thank u Mehreen Ehsan, I love u babe !

Unfortunately i forgot to take photos of the first few steps. Sorry guys ! :(

Ingredients:
(For the barey)
Gram Flour ( besan) : 6 tbsp
Salt : to taste
Red chili powder : 1/4 tsp
Baking Soda : 2 pinch

(For Dahi)
Yogurt : 1/2 kg
Red chili powder : to taste
Salt : to taste
Garlic : 2 cloves crushed

Method:

Mix together the ingredients for the barey with water till its dropping consistency(not too thick and not too thin) and leave for 30 minutes.

Mix together the ingredients for Dahi. Keep aside.

Heat oil in a frying pan(Do not do this is a wok, they become like a ball and stay hard in the center, frying pan works best, much better if its non-stick)
drop a teaspoon of the mixture, it will flatten automatically if it doesnt flatten it with a spoon. Cook on both sides till golden brown.

When they r done directly drop them in hot (not boiling) water. Cover for 5 minutes then take them out on a sieve.

When they warm to touch, press each one in your hands to drain excess water(i broke a few :D they were That soft :D)

 Pour Dahi over the barey, Sprinkle with Chaat Masala, add a bit of Sweet tamarind chutney as well .

Tip : You can also do a tarqa of whole red chilli and Curry leaves to add a little variation.

Cheesy Bread Rolls



I was bored today, so i decided to make dahi barey, which by the way ended in disaster (the barey could crack a mirror if you through at it, that were that hard :D)
With dahi barey ruining i had to do something else, so what i decided to do was modify the chicken bread recipe that i already have and make it even more delicious. I added cheese and veges, and the dough is a little different too!

Ingredients :
(For the dough)
Flour : 2 cups
Salt : 1/4 tsp
Yeast : 1 tbsp
Sugar : 1 tbsp
Oil : 1 tbsp
Yogurt : 2 tbsp ( You can skip the yogurt if u like, but it does make the bread super super soft )

(For the filling):
Onion : 1 small diced
Chicken : 1/2 breast fillet (boiled and shredded)
Butter or margarine : 1 tbsp
Flour : 2 tbsp
Milk 1 1/2 cup
Salt : to taste
Black pepper : 1/2 tsp
Garam masala : a pinch
Capsicum : 1 diced
Carrots : 1 diced (i didnt have carrots at home to i didnt use it)
Spring Onion : 2 chopped
Green Chillies : 4 chopped
Mozzerella / cheddar cheese : 1/2 cup ( i used half block of the one in the picture)
Egg : 1 beaten

Method :

Dissolve sugar and yeast in 4 tbsp of warm water.

Mix together all the ingredients for the dough including the yeast mixture.

 Knead with warm water to make a soft dough.

Leave to rise for 1 hour.

Meanwhile make the filling.
 Melt butter, add onions, cook till transparent. Add capsicum, salt, garam masala and black pepper.

 Add flour, Cook for a minute...

Add milk, cook till thickened.

 Add Green chillies, Spring onions and shredded Chicken.

Leave to cool.

 Roll the dough in circle, 1/8th of an inch thick.

Cut in 8 triangles with pizza cutter or a sharp knife.

Put a little amount of filling on the broad side.

Sprinkle a generous amount of mozzarella/cheddar cheese on top of the filling.

Fold and brush with egg. Bake in a preheated oven at 200 degree centigrade for 25 30 minutes. ( make sure u check regularly, i got careless and let them sit in the oven for 2 extra minutes and they got a little too brown)

Ras Malai



Hey all
Ramadan Mubarak !

So today i woke up with an image of ras malai in my head, I knew right than that i had to try it Today. There was nothing my mother could do to change my  mind about that :D, so she just left me alone in the kitchen to make a mess :D
I've had this recipe for a while but never got around to making it, even though its a fairly simple and easy recipe. And believe me, the taste is amazing !!!

This recipe makes about 18-24 depending on the size u make.

Ingredients :
Milk : 1 liter
Sugar : 10-12 tbsp (depending on ur taste, i used 10)
Cardamom : 2-3
Milk Powder (i used Nido) : 1 cup
Baking powder : 1 tsp
Oil : 1 tbsp
Maida : 1 tbsp leveled
Egg : 1

Method :

Mix together 1 liter Milk, sugar and Cardamom. Put on low flame and bring to boil.

Let it simmer for 25-30 minutes to thicken.

 Meanwhile mix together Milk powder, Baking powder, Flour, Egg and oil...

...to form a medium dough...

 Make small balls...

 ...and lightly drop them in the simmering milk. Half cover the pot and leave for 10-12 minutes on low flame.

 After 10-12 minutes they will swell and rise to the surface. Remove from heat.

Garnish with almonds or pistachios. Chill and serve !
