Dhaba Karahi



This karahi recipe is the most delicious karahi recipe of the lot of recipes that i have. Its different but absolutely delicious with some gorgeous and subtle flavor of black pepper and dried fenugreek leaves.

Ingredients :
Mutton : 1 kg
Ginger garlic paste : 1 1/2 tbsp
Tomatoes : 6-7 medium sized
Salt : to taste
Black pepper : 1 tsp
Zeera : 2 tbsp                                  {blend zeera and Sookha dhaniya together}
Sokha dhaniya : 2 tbsp
Yogurt : 250 gm ( 1 pao)
Fenugreek leaves ( kasuri meethi) : 2 tbsp heaped
Oil or Ghee : 1/2 cup


Method :

Heat oil in a wok, add Ginger garlic paste. Fry till golden brown and fragrant than add the mutton.

When the mutton changes a little color add salt, halt of the sookha dhania zeera blend and half of the kasoori meethi. Mix

Add tomatoes without skin (remove the skin by blanching the tomatoes for 5 minutes then peeling off the skin or you can do what i did, cut the tomatoes in half and place them on top of the mutton with the cut side down, cover and leave on low flame for 15 minutes)

Than just grasp the skin with a tong, it will come off easily.

Now add black pepper and the remaining sookha dhaniya zeera blend and kasuri meethi. Cook till oil comes on top...

...than add yogurt. Cook for 5-7 minutes more.

 Garnish with coriander and green chillies and serve!

Electric Lemonade



If u want a fabulous thirst quencher and something to cut the heat of the summer, than this lemonade is for u !!

This recipe makes 2 glasses of delicious lemonade.

Ingredients :
Ice : 12 cubes
Lemon : 3 (normal size) or 2 if you are using large ones
Sugar : 2 tbsp
Salt : 1/2 tsp
Blue food color : 2 drops (optional)
7up (or any white frizzy drink) : 1 glass full



Method:

Add ice cubes, lemon, sugar, salt and food color in a blender with a little bit of water. Blend to make a fine slush.

Pour it in the glass (halfway full) than add 7up on top. Mix and Enjoy!!

Chicken Manchurian With Fried Rice




I tried this recipe of Chicken Manchurian for the first time today. It turned out really delicious !

Here goes:

Ingredients: Manchurian:
(for marination)
Chicken : 1/2 kg boneless and cubed
Flour : 1 tbsp
Cornflour : 1 tbsp
Egg : 1
Black pepper : 1/2 tsp
Red chilli flakes : 1/2 tsp
Soy Sauce : 1 tsp

Oil : 2-3 tbsp
Ginger : 1tsp (crushed)
Garlic : 1 tsp (crushed)
Sweet chilli sauce : 3 tbsp (u can use store bought or u can make ur own, the recipe is at the end of this post)
Chilli garlic sauce : 3 tbsp
Tomato ketchup : 4 tbsp
Salt : to taste
Black pepper : 1/2 tsp
Chicken Stock : 2 cups
Onions : 2 cubed
Carrots : 2
Capsicum : 3
Spring onions : 3-4
Cornflour : 2 tbsp ( dissolved in 1/4 cup of water)

Method :




 Marinate chicken in flour, Cornflour, egg, black pepper, red chilli flakes, soy and a bit of salt. Leave for 30 minutes

 Than deep fry till golden brown...

Take out and keep aside.

 Now in a wok add oil, ginger garlic, when fragrant add carrots, onions and capsicum. stir fry on high heat...

 ...than add fried chicken and spring onions, salt, black pepper, Chinese salt. Stir fry.

Add sweet chilli sauce, soy, tomato ketchup, chili garlic sauce and chicken stock. Bring to boil and add cornflour mixed in water to thicken the gravy.

Now for the rice 
Rice : 1 kg (boiled)
Capsicum : 1 chopped
Carrot : 1 chopped
Spring Onion : 2 chopped
soy sauce : 2 tbsp
chili sauce : 2 tbsp
Salt : to taste
Black pepper : 1/2 tsp
Chinese salt : 1/2 tsp

 Heat a tbsp of oil in a wok, add ginger garlic paste and chopped vegetables, salt, black pepper, chinese salt, soy and chilli sauce. stir on hight heat.

 Add boiled rice and mix.

Enjoy !

For Sweet Chili Sauce :
Soy sauce : 3 tbsp
Vinegar : 3 tbsp
Ketchup : 2 tbsp
Red chili flakes : to taste
Sugar : 1 1/2 tbsp

Cook these ingredients in a sauce pan for 3-4 minutes. Cool.

Devil's Food Cake (and cupcakes) with Chocolate Ganache




One of my auntie (neighbor) came from umra a few days ago and i really wanted to make a cake for her, which i did today. I think homemade cakes are way better than the store bought. (thats just my opinion).
As for the cupcakes, my sister(hira amjad) thought it would be unfair(i dont know how) if i didnt make cupcakes for her. So i made the cupcakes with the same batter as well.

This recipes makes 12 cupcakes and one 9 inch round layer, so to make the same cake that i made, you'd have to double the recipe. 

Ingredients :
Butter : 50 gm
Eggs : 2
Sugar : 3/4 cup
Oil: 4 tbsp
Dark or Milk chocolate : 2 ounces (4 tbsp)
Boiling water : 1/4 cup
Flour : 3/4 cup
Baking Soda : 1/2 tsp
Cocoa powder : 2 tbsp
Salt : a pinch
Butter milk : 1/2 cup ( normal milk with 1/2 tsp of vinegar, leave to rest for 10 minutes)
Vanilla essence : 1/2 tsp

Method:
Pour boiling water on the chocolate and mix till smooth. Keep aside.

Sift flour, cocoa powder, baking soda and salt. Keep aside.

Beat butter and sugar till light and creamy...

 ..Add vanilla essence, eggs and chocolate mixture. Beat.

Now add sifted Flour mixture and milk in 3 batches.

 The batter would be a little runny and would look somewhat like this.

Pour in a 9 inch round pan and bake in a preheated oven for 20-25 minutes or take it out when a tooth pick inserted comes out clean.

i baked two layers :)


Now For the Chocolate Ganache:
Ingredients:

Cream : 200 ml (i would suggest nestle creation, this haleeb didnt work out that well)
Chocolate chip : 175 gm

Method :

 Heat cream. Do Not BOIL..

 ...and pour it over the chocolate. Leave for 2 minutes than whisk until smooth. Keep it in the freezer for 30 minutes.

...Than whip till spreadable !

Now to assemble the cake :

 Spread ganache between the two layers of the cake. and on top as well.

You can decorate any way u like. i used chocolate and coconut truffles and white chocolate chips.


I love Cupcakes :D

Tip: As for the truffles, u can mix the leftover cake that u get from leveling the cake with a bit of frosting, pop it in the fridge to harden for 30 minutes, form balls and coat them in coconut.

Pasta with Seekh Kabab in Red Sauce




Ingredients:
Pasta : 1/2 packet
Seekh kabab : 3-4 (i used frozen ones) (u can substitute anything with this, chicken, beef, anything would work)
Soy Sauce : 1 tbsp
Chilli Sauce : 1 tbsp

(For the red sauce)
Onion : 1 (diced)
Ginger garlic paste : 1/2 tsp
Tomato puree : 5 tbsp
Tomato Ketchup : 4 tbsp
Salt : to taste
Red Chilli Flakes : 2 tsp ( can alter according to ur taste)
Sugar : 2 tbsp
Oregano : 1/2 tsp
Thyme : 1/2 tsp ( optional, but it does give an amazing fragrance)

Method:
Boil Pasta. keep aside.

Cut seekh kabab in chunks. keep aside.

Now for the sauce

Heat approx 2 tbsp of oil and add onions, fry till transparent.

Than add ginger garlic paste. When fragrant...

...add tomato puree and tomato ketchup...

...and all the spices and herbs and a little water.

let it cook on low flame till thick and delicious !
check and adjust seasoning at this stage.


Now in a different pot add 1 tbsp of oil, heat it on high flame and add seekh kabab, soy sauce, chilli sauce. stir for a min than add the red sauce and pasta. Mix thoroughly and serve!!

Enjoy !!

Tip : u can add variation to this dish my sprinkling it with cheese and baking it in the oven for 5-10 minutes.
Tip : u can make ur own tomato puree by blanching the tomatoes for 2-3 minutes, removing the skins and blending them together with 2-3 cloves of garlic.
