Chicken Biryani


So, i was bored today, didnt know what to do and my mother was planning on making "Maash ki Daal", i had to think of something quick, so i told her that i'd make chicken biryani. 

So here goes,

Ingredients:
Rice : 1 kg ( i used basmati rice)
Chicken : 1 kg
Onion : 3 medium sized (sliced)
Potatoes : 4 large ( peeled and cut in 4 pieces)
Tomatoes : 4 medium sized ( diced)
Green Chillies : 10 (u can alter according to ur taste)
Ginger garlic paste : 1 tsp heaped
Salt : To taste
Red Chilli powder : 3 tsp ( alter according to ur taste)
Turmeric powder : 1/4 tsp
Coriander powder : 1/2 tsp
Clove : 8-10
Peppercorn : 10-12
Cinnamon : 2-3 sticks
Black cardamom : 2-3
Star Anis : 2
Yogurt : 250 gm ( 1 pao)
Lemon : 1 (Sliced)
Dried plum : 4-5
Zeera : 1/2 tsp
Mint : 1/2 bunch
Onion ( for tarqa) : 1/2 (sliced)

Method:
Clean and soak rice in water for 30 minutes, than boil. Keep aside.

Heat oil and add onions. Fry till golden than add Ginger garlic paste.

When fragrant, add tomatoes, chillies and potatoes...

...and salt, red chilli powder, turmeric, coriander powder, clove, peppercorn, cinnamon, black cardamom and star anise 

Add a little water, cover and let cook for a few minutes till the potatoes are tender.


when the potatoes are almost done add chicken...

....and yogurt, dried plum and sliced lemon.

Mix till and let cook on medium flame till the oil comes on top, approx 5-7 minutes.

The Korma's done !


Now layer korma with rice, sprinkle with zeera, mint and fried onion tarqa. put on dam for 10 minutes.

This is where I get my mint :)


There you have it, a gorgeous and yummy looking plate of biryani. Enjoy!

  5. Could you tell me what we call "clove" and "star anise" in urdu? I donno much about cooking and therefore spices but i'd want to get this made tomorrow so I need to see if we got all the ingredients. And if i dont have it, i can just get it from any store?
    Also, I don't like whole peppercorn in my rice, so can I just skip it?

      Clove is "Long" and and star anise is "badyani phool"
      Yes you can get all these spices from any store.
      you can sure skip it, but it does give a wonderful flavor to the rice, you can always reduce the quantity, so that it wont come on your plate that much and you'd still get the wonderful flavor :)

  6. Oh thank u so much, and ok i'll jist reduce the quantity cuz I dont wanna compromise on the flavor :-)
    u didnt mention the amount of oil we need... Can u tell me that? Also, dont we need garam masala or black pepper in this?

    1. You can use Oil according to your preference. I use around 3/4th to 1 cup
      And there is whole garam masala (clove,peppercorn, cinnamon, black cardamom) in the recipe, so the powdered version is not necessary !
