Kashmiri Tea



Kashmiri tea, also known as Noon Chai or Salt tea, is a traditional tea of Kashmir.

The Authentic recipe is usually a pink salty tea, but nowadays people enjoy it with sugar as well.

The recipe calls for special Kashmiri tea leave and baking soda, to give it that distinctive pink color.


Ingredients :
Kashmiri Tea leaves : 1 1/2 tbsp
Baking soda : a pinch
Water : 6-8 cup
Sugar/Salt : to taste
Milk : 2-3 cup
Cardamom : 3-4

Here's how its done:


In a pot add 2 cups of water, baking soda..

..and kashmiri tea leaves. Cook on medium flame till almost all the water evaporates. Than add 1 cup of cold water, again let it evaporate. Do this 3-4 times. This would take around 30-40 minutes.

Than add 3-4 Cardamom and 5-6 cups of water

Let it boil on medium flame for an hour.
Beating it a little every few minutes.

Strain and put it on flame again.

Add milk (Keep adding milk, till u reach the desired pink color) and sugar/salt.
Cook for further 10-15 minutes

Coarsely crush almonds and pistachios.

Serve !

  17. Same as the simple Kahwa is prepared in the Samovar, Dode kahwa is prepared in that way too. Dode means milk, so in place of water, Milk is used and boiled hard. Also, saffron is not placed in the milk and then boiled. Instead, it is put inside the cups. Care must be taken not to place ingredients into the milk directly. As all the elements of Kahwa need to dispense their valor and smell, all these need to be boiled in a few amounts of water. Later the solution obtained needs to be added to the milk.
