Chocolate Chunk/Chip Cookies




I was having Chocolate chip cookie cravings ever since i woke up today, so i go to my kitchen but I see that i've run out of butter, milk chocolate chips and brown sugar (which, by the way i found with some extensive pantry searching).

I compensated for the chocolate chips by some chocolate bar (diary milk) that i had at home.

As for the butter, I just thought of using vegetable oil ! :D

If you are a gooey cookie lover, like yours truly, than these cookies are for u !!

I didnt even take a proper picture. !:D sorry !!

Ingredients :
Flour : 1 1/2 cupsBaking soda : 1/2 tsp
Salt : 1/4 tsp
Sugar : 1/4 cup
Brown Sugar : 1/2 cup 
Vegetable oil : 1/2 cup 
Egg : 1 large
Vanilla essence : 1 tsp
Chocolate chips : 2/3 cup (I used 1/3 cup of milk chocolate chunks and 1/3 cup of white chocolate chips)


Method:

Sift together flour, salt and baking soda. Keep aside.

Whisk oil and both sugars...

Add egg and vanilla essence. Whisk until incorporated.

Add the flour. whisk. it fill form a sticky dough.

Add the chocolate chunks or chips (i ran out of chocolate chips :D )

...white chocolate chips.

Fold.

Line the baking sheet with parchment paper. Drop a tablespoon of batter 2 inch apart.

Bake in a preheated oven at 180 C for 13-15 minutes.

And get ready for gooey deliciousness !!

Baked Spaghetti Bolognese (My Version)



As you know by now that "I love food!", i am constantly trying to make up different things (I dont like regular everyday food) :D. We dont have such thing as spaghetti bolognese in Pakistani cuisine, but i searched on it for a few days, saw some recipes, and sort of twisted them to suit our Pakistani palate. And it turned out super delicious, I can say that for sure because my sister was literally drooling over her plate :D

This recipe serves about 5-6 people.

Ingredients:
Chicken Mince/finely chopped : 1 breast piece
Spaghetti : 1 packet
Onion : 1
Garlic : 3-4 cloves
Carrot : 1
Tomato puree : 1 1/2 cup
Tomato ketchup : 4-5 tbsp
Salt : to taste
Red chili flakes : to taste ( i used i heaped tbsp :D )
White pepper : 1/2 tsp
Black pepper : 1/2 tsp
Chinese salt : 1 tsp
Oregano : 1 tsp
Thyme : 1 tsp
Sugar : 2 tbsp
Cheddar cheese
Mozzarella 



Method :


Finely dice Onions, Carrots and Garlic. Keep aside.

Heat 2 tbsp of oil in a pan, Add onions. Cook for a minutes...

...than add carrots. Cook for 5 minutes more.

Add garlic. Cook till fragrant, a minute more.

...Than add chicken mince. Cook for a minute. Dont worry if it starts sticking to the pan, just keep stirring. Deglaze the pan with a tbsp of vinegar. 

Add salt, red chili flakes, white pepper, black pepper, chinese salt...Mix.

...add tomato puree and tomato ketchup. Cook for a minute.

Add sugar and oregano...

...and 1 1/2 to 2 cup of water. Let cook on medium flame for about 40-45 minutes. The more it cooks, the more delicious it gets.

When thick add thyme. (it can be skipped if you dont have it on hand, but it does give a gorgeous aroma)

Take off heat when it's thick and delicious. Taste and adjust seasoning.
Leave to cool.

Cook Spaghetti according to package instructions.

Drizzle with a little bit of oil...

...I used extra virgin olive oil.


Toss to coat.

Grease a deep oven proof dish.

Add in the Spaghetti

..some grated mozzarella  

...the sauce..

...top it off with some grated cheddar, sprinkle of black pepper and oregano.

Bake in a preheated oven at 200 C for 20 minutes.

Chicken BBQ Burgers with Caramelized Onions



Me and hira were in a mood for some juicy burgers tonight. I thought of asking my brother but i'm sure he would've said that he wants a zinger burger (as usual), but we wanted something amazing and different. So after half an hour of brain storming, letting my imagination run wild and searching and mixing up different recipes. I came up with this!

You can surely skip the italian dressing and wastershire sauce if you dont have it on hand. You can even skip the caramelized onions if you don't like them

This recipe makes about 7-8 patties. You can even freeze the leftover patties for 3-4 months.

Ingredients:
(For the patties)
Chicken mince : 1 pound (or breast of 1 chicken, made mince at home)
Onion : 1 medium
Garlic : 3-4 cloves
Salt : to taste
Red chili flakes : 2 tsp (adjust according to your taste)
Red chili powder : 1/2 tsp (adjust according to your taste)
Worcestershire sauce : 1 1/2 tsp
Italian dressing : 1 tbsp
Barbecue Sauce : 4 tbsp
Cheddar cheese : 2 tbsp grated
Black pepper : 1 tsp


(For the Sauce)
Mayonnaise : 4 tbsp
Salt : to taste
Italian or french dressing : 1 tbsp
Onion : 1 tbsp (finely chopped)
Vinegar : 1/2 tsp
Sugar : 1/2 tsp fine

(Other Ingredients)
Onion : 1 sliced
Barbecue sauce : 1/4 tsp
Soy sauce : 1/4 tsp

Burger buns
Lettuce
Cheese slices
Ketchup

Method:

To the chicken mince, add finely diced onions, Finely chopped garlic,

salt, red chili flakes, red chili powder, black pepper,

Worcestershire sauce, barbecue sauce, italian dressing and cheddar cheese.

Mix. Leave for 30 minutes.

Meanwhile, mix all the ingredients for the sauce. Keep aside.

Heat 1 tbsp of oil in a pan.

Add onions and a pinch of salt.

fry on low flame till transparent, about 10 mins. Than add soy sauce and/or BBQ sauce (both of these can be skipped) :D

Take off heat. Keep aside.

Make patties.

Heat 2-3 tbsp of oil in a frying pan. Add the patties. Fry on 1 side for approximately 4-5 minutes (depends on the thickness of the patties)

Flip.

When the patties are cooked, Put the cheese slices on the patties, cover for a minutes, for the cheese to melt slightly.

You can toast the buns if you want (i didnt)
Apply a tbsp (approx) of the sauce.

Lettuce.
