Calzone



Calzone originated from Italy. It is shaped like a semicircle, with the dough folded over and stuffed with ingredients common to pizza.

Remember the Mughlai Malai Chicken recipe that i posted yesterday? I used the same chicken in the filling for this !

This recipe yields 2 Calzones.

So for my version of the Calzone, you'll need,

(For the dough)
2 1/2 cups of All purpose Flour
1/2 tsp of Salt
3 tbsp of Oil
2 tbsp of Yeast
1 tbsp of Sugar

(For the Sauce)
2-3 large Tomatoes
1 Onion finely diced.
1 tsp of freshly crushed Garlic
3-4 tbsp of Tomato ketchup
Salt to taste
1 1/2 tsp of Red chili flakes (adjust according to taste)
1/2 tsp of Oregano
1/2 tsp of Thyme

(For the Filling)
1 cup of Any type of prepared chicken (I used Mughlai Malai Chicken)
2 large Capsicum diced
1 large tomato diced
1 large Onion diced
1 cup of Mozzarella Cheese shredded
1/2 cup of Cheddar cheese 

Method :

(For the Dough)
Mix Yeast and Sugar with 4-5 tbsp of warm water. Place it in a water bath (Boil water, turn off heat and place this glass in the water) Leave to froth for 5-6 minutes.

Mix flour, salt, oil and the yeast sugar mixture to make a soft dough. 
Add warm water if needed.

Leave to rise for 1 hour.

(For the Sauce)

Blend tomatoes with a little bit of water. Keep aside.

Heat 2 tbsp of oil in a sauce pan. Add onion, cook till transparent.

Add freshly crushed garlic, cook till fragrant.

Add purred tomatoes...

...salt, red chili flakes, oregano, sugar and a little water.

When a little thick, add thyme.

Cook till saucy and thick.
Leave to cool.

(To Assemble)

Knead the dough a little, divide the dough in half. Roll out 1 half and place it on the baking tray in a circle.
Do the same with the other half, placing it on the other sheet. Leave for 20-30 minutes to rise.

Add the sauce , chicken, vegetables and cheeses on one side only.

Fold it over. I used butter paper underneath it, to lift it, as i baked both of these in the same tray.

Pinch in the sides so that the filling does not leak out. Make 2-3 indentations on the top.

I baked both of these together on a cookie sheet :D

Bake for 15-20 minutes in a preheated oven at 200 degree centigrade.

Mughlai Malai Boti



My parents were going to someone's wedding today, 
so we decided to make something for ourselves, and as usual my brother wanted pizza
I was not going to give in to that, I've had my share of pizzas, and they r quite a lot, and yea, you guessed it, I wanted to try something different.

But he wouldn't eat anything else, so i had to come up with something that revolves around a pizza.

 Calzone, thats what came to my mind ! (I'll post the recipe for that tomorrow!)

I had this a few months back at Port Grand, and i thought about making it at home, but literally forgot about it till today.

So, for the filling i had to have chicken

I thought about doing teriyaki chicken, chicken tikka, and blah blah. You have no idea how many possibilities came to my head. I finally settled on chicken tikka, but i didnt have yogurt on hand, but there was cream, why not make malai boti, thats what i did !

I just added everything i could find ! :D
so yea, this recipe is totally mine !! 

The chicken pieces can be added to spaghetti, pizza, sandwich or can be eaten as it is ! 
Super Juice and Totally Delicious either way !


Ingredients :
1/2 kg Chicken boneless (cut in cubes)
5-6 tbsp of Cream
2 tbsp of Cream cheese 
Salt to taste
1/2 tsp of Black pepper
1/4 tsp of Chaat Masala
1/4 tsp of All Spice
1 1/2 tsp of finely chopped Green Chilies
1 tbsp of Lemon Juice.

Method :

Marinate Chicken in all the ingredients for 1 hour.

Put the chicken pieces on skewers.

Than grill them on a pan or coal or you can bake them as well.


Serve with ketchup or coriander raita or a dip of your choice!
Get ready to be praised !
