Mocha Mousse Cake






EID MUBARAK EVERYONE!!

I've been making cakes on Eid for as long as i can remember. My brother has been asking me for a coffee cake and i know i had to do some sort of mousse, So this Eid i decided to make a mocha mousse cake !

The cake will have two layers of chocolate cake, mocha mousse filling and chocolate ganache glaze.
And u had to have a pan like this :



Okay than, lets start !

For the chocolate layer cake.
You can use any chocolate cake recipe
i used my devils food cake recipe, which you can find here

You can make the layers separately or double the recipe and cut the layers after the cake is baked ( as i did, its much easier and less time consuming)

For the Mocha Mousse 
Egg yolk : 5
Sugar : 1 cup
Cream : 1 cup chilled
Coffee powder : 2 1/2 tsp
Egg whites : 3
Vanilla essence : 1/2 tsp
Gelatin : 1 1/2 tbsp
Cocoa powder : 1 tsp
Hot water : 1/4 cup



Method:


Mix 1 tsp coffee, Cocoa and gelatin in hot water. Mix till gelatin dissolves.

Whip cream with remaining 1 1/2 tsp of coffee...

...till soft peaks form. Keep aside.

In a medium bowl whisk together egg yolks and 1/2 cup sugar. Set this bowl over a pan of simmering water. (Make sure that the water does not touch the bottom of the bowl).
Whisk with electric beater till pale and a little thick.

Add the gelatin mixture. Take off heat.
Whisk till cool.

Than fold in the whipped cream. 

Whip Egg whites with the remaining 1/2 cup of sugar in a clean bowl till glossy and stiff.

Fold the egg whites in the mousse in 2 batches till no white streaks remain.


Add chocolate chips or crushed biscuits ( chocolate chip cookies,oreos)
This step is entirely optional.


Line the border of the pan with butter paper.

Place one layer of cake on the bottom

Spread the mousse evenly over the cake. Put it in the fridge for 30 minutes to set.

Place the other cake layer on top of the mousse. 
Top it all off with chocolate ganache.
Leave in the fridge for 2-3 hours or overnight.

Peel off the butter paper.

Decorate any way you like. I used crushed Oreo...

...and white chocolate chips!

      you can get this pan from any good superstore or a place where you get your baking supplies.
      If you r in karachi, you can check out Naheed's Agha;s, Ebco, Zubaida's home store, or you can check out the market near memon foundation.
      And i really dont remember the price, i bought it around 4-5 years back !
