Fish Masala



I'm not a big fan of fish, I do eat it sometimes when its prepared a certain way (this is one of those ways) :P

My father loves sea food, he likes to cook it himself ,
fish, prawns, lobster, crab, you name it!
so this is actually his recipe.

And for the record, my mother made this, I helped :)
but i thought i'd share the recipe as it is one of the most delicious fish masala I've ever had. Super juicy and succulent !

You should most definitely try this !
Ingredients :
1 kg of Fish, we used Salmon
3-4 medium sized Onions sliced
2 tsp of Ginger Garlic paste
4-5 large Tomatoes diced
7-8 Green chilies chopped
15-20 Curry Leaves
Salt to taste
1 1/2 tbsp of Red Chili powder (adjust according to taste)
1 tsp of Coriander powder
1/2 of Turmeric powder
1 cup of yogurt

Method :

Heat oil in a pan, I used a flat bottomed wok. Add sliced onions and fry till golden brown

Add ginger garlic paste and cook till fragrant (do not brown)

add the diced tomatoes, green chilies, salt, red chili powder, turmeric, coriander powder and 1/2 cup of water. 

Cook till the tomatoes are tender and the oil is released, than add curry leaves and half of the yogurt.

(This is where we get Curry leaves, from a tree in our garden)


Mix once and spread the masala even in the pan.

Place the fish on top of the masala in a single layer, add the remaining yogurt on top of the fish. You wont be using a spoon after this.

Cover and let it cook. Move the fish around by holding the sides of the pan with a cloth and shaking it lightly.

Cook till the fish is tender. 

Top it off with coriander and green chilies. 
                                                  

Serve with wheat flat bread or plain boiled rice.



Super juicy and succulent !

Coffee !



Hey guys !

This is actually a special post for a relative and a sweet person overall,  Nazish Khurram
(I hope you see this soon, and i really hope you enjoy this coffee as much as i do)

There are many ways you can make coffee, i'm sure you guys know quite a few yourself, this is just the way i make it.

Take around 15 minutes to make, and worth every second !

This recipe yields 2 cups of delicious coffee. Ingredients can be easily doubled or tripled.

Ingredients :
1 1/2 tsp of Coffee (I use Nescafe classic) (adjust according to you preference, I like my coffee a little strong, if you like a lighter version than use 1 tsp)
2-3 tsp of Granulated Sugar
1 1/2 cup of Milk
1/2 cup of Water
2 tbsp of Cream (optional)

Method:

Mix milk, water and cream(if using), let it come to boil on a medium low flame.

Meanwhile mix coffee and sugar in a mug, add a few drops of water 

...and beat with a spoon till it becomes light and thick. Add water 1 drop at a time if it gets too thick.

Divide the mixture in 2 cups.


Add the hot milk to the rim. Lightly stir with a spoon, Sprinkle cocoa powder or horlicks or any chocolate powder and Serve immediately !

Orange Lemonade



 I love Oranges !

Oranges are in season for quite sometime now and i've been meaning to do something with these.

I was planning cupcakes, but never got down to it !

So a while back i was going through some orange lemonade recipes, and this one recipe just stuck with me, because at that time i was thinking about simplifying it much more (as i didnt make the sugar syrup, i just added the powdered sugar with everything and blended it all together !) and adding a tiny bit of salt.


Now, for my version of it.

This recipe makes about 3 glasses
Ingredients:
1 1/2 cup of Orange juice (I used freshly squeezed)
juice from 2 Lemons
1/2 cup of cold Water or Ice
3-4 tbsp of sugar (adjust according to your taste)
1/4 tsp of salt 
1 cup of any white fizzy drink or soda



Blend everything except the fizzy drink.


Pour this slushy mixture in glasses 3/4 of the way full

Add the fizzy drink all the way to the top. Serve immediately.

Blackberry Cake


Hi guys !
Sorry, no savory post this week, I've been busy making cakes :D
This is the cake that i made today,
for a guy who is a blackberry addict.
The birthday boy's sister ordered this cake from me !

Its a two layered chocolate cake, filled and frosted with chocolate ganache, than covered with fondant
The alphabets on the keys and the side border is made with Royal icing (see recipe below)
Its a very versatile icing that dries with a smooth matte finish.
Any color can be added to this to suit your style !
And yeah, let it air dry, do not, under any circumstances put it in the fridge to dry (as i did the first time i made it a few years back) it becomes a mess when u take it out, all your effort gone to waste.
Just let it air dry.
Ingredients :
2 egg whites
2 cups of powdered sugar
1/4 tsp of cream of tartar (or lime juice or a pinch of salt)
Method :

Before starting make sure your beaters and the bowl are grease free,

wipe them with a little bit of lemon juice or vinegar.

Beat egg white with cream of tartar till foamy 
Start adding sugar 1 tbsp at a time till all the sugar is incorporated (Do not add all the sugar at once)


Beat till glossy and stiff peaks form.

This can now be used to decorate cakes, cupcakes or cookies!


Cover it with a cling wrap until ready to use, to prevent drying.
