Sorry, no savory post this week, I've been busy making cakes :D
This is the cake that i made today,
for a guy who is a blackberry addict.
The birthday boy's sister ordered this cake from me !

Its a two layered chocolate cake, filled and frosted with chocolate ganache, than covered with fondant
The alphabets on the keys and the side border is made with Royal icing (see recipe below)
Its a very versatile icing that dries with a smooth matte finish.
Any color can be added to this to suit your style !
And yeah, let it air dry, do not, under any circumstances put it in the fridge to dry (as i did the first time i made it a few years back) it becomes a mess when u take it out, all your effort gone to waste.
Just let it air dry.
Ingredients :
2 egg whites
2 cups of powdered sugar
1/4 tsp of cream of tartar (or lime juice or a pinch of salt)
Method :
Before starting make sure your beaters and the bowl are grease free,
wipe them with a little bit of lemon juice or vinegar.
Beat egg white with cream of tartar till foamy
Start adding sugar 1 tbsp at a time till all the sugar is incorporated (Do not add all the sugar at once)
Beat till glossy and stiff peaks form.
This can now be used to decorate cakes, cupcakes or cookies!
Cover it with a cling wrap until ready to use, to prevent drying.

The whole cake is covered with black colored fondant, the ganache is underneath that.
