Baked Capsicum Stuffed With Mince Fried Rice



My father bought some gorgeous looking capsicums today, that is when i thought of making Stuffed capsicums. This is actually a desi version of Greek dish, as my father spent a lot of time in Greece so he knows alot about Greek cuisine. He's the one who taught me how to make these delicious capsicums !

So here goes.

Ingredients:
Chicken/Beef Mince : 1/2 kg
Onion : 1 large sliced
Tomatoes : 2 diced
Green Chilies : 6-7 chopped
Salt : to taste
Red chilli powder : 1 tbsp 
Haldi : 1/4 tsp
Dhaniya powder : 1/2 tsp

Carrots : 3 
Capsicum : 8-10 (large and with a proper base)
Rice : 1/2 kg
Black pepper : 1/2 tsp

Method :

Clean and soak rice in water for 30 minutes. Than boil and keep aside.

Dice carrots. Keep aside.


Cut off the top of capsicums and take out the seeds with a spoon or a knife.


Cook mince in a little oil with onion, tomatoes, green chili, salt, red chilli powder, haldi and dhaniya powder.

Cook covered on medium flame. When done, "bhono-fy" till the oil is release and it looks like this. 

Add carrots, black pepper...

...and rice in the cooked Mince. Mix.

Stuff the rice in the capsicums.

Cover with the lid. Secure the lid with tooth picks :D



 And bake in a preheated oven at 180 for 30 minutes.


 ENJOY!!

Tip : You can add your own twist on it by stuffing the peppers with Chinese stir fried rice :D and anything else u like !!
